Malam berinai food in Singapore, the short answer: Singapore's heritage records describe the henna night's rites, not its menu. For about 50 close family in an HDB flat, the planning is mostly practical: one compact buffet, food eaten within four hours of cooking, and a clear corridor.

A malam berinai (henna night) is the evening a Malay bride, and sometimes the groom, has henna (inai) put on before the wedding. Below: what the custom is, what the records say about food, and what changes when 50 relatives fit into a flat.

Key takeaways

  • The National Library's BiblioAsia (2021) records that few families in Singapore still hold a berinai. For families who hold one, the shape of the evening, food included, is theirs to decide.
  • The records name no set berinai menu. Plan food for the flat and the clock.
  • SFA: catered food kept at room temperature should be eaten within 4 hours of being cooked. Ask for delivery at most 1 hour before you eat.
  • SCDF: keep a clear 1.2 m escape passage along the common corridor, which matters when 50 pairs of shoes arrive.
  • Saffrons caters from 30 guests. For 50, a Mini Buffet (trays or thermo jars) or a Buffet Package (delivered and set up) both fit.

What is a malam berinai?

Malam berinai means "henna night". Inai is the Malay word for henna, as the National Heritage Board's Roots site notes in its entry on henna. That entry adds that in Singapore henna is used mainly by the Malay and Indian communities, especially at weddings, and that men may wear henna to show they are the groom.

The berinai is a Malay wedding custom. In Roots' words, it is when the bride's fingers are stained with henna, on the eve of the bersanding (sitting-in-state). During it, the bride is sprinkled with rose water (Roots, perfume sprinklers record).

Traditionally there was not one henna night but three. BiblioAsia, the National Library Board's journal, sets them out in "Malay-Muslim Weddings: Keeping Up with the Times" (2021):

  • Berinai curi ("stolen" henna): for the bride, with the women of her family and her close friends, usually two days before the nikah (the marriage solemnisation), in the evening.
  • Berinai kechil (small henna ceremony): the next evening, with both bride and groom.
  • Berinai besar (big henna ceremony): straight after the nikah, typically held at the bride's home.

At the centre of all three, BiblioAsia says, was the tepung tawar, a blessing ritual.

Is malam berinai still held in Singapore?

Less often than it once was, according to the National Library's record. BiblioAsia says the berinai, once a big part of Malay weddings, is "rarely observed in Singapore today". It puts this partly down to the cost and the time involved.

The two earlier ceremonies faded first. By the 1980s, the berinai besar was the one still commonly held, and by around the early 2000s it too had disappeared, the article says.

The tepung tawar blessing is also rarely practised now. When it does happen, BiblioAsia says, it takes place during the bersanding and is led by the elders present, among them the couple's parents.

So a family that holds a henna night today is keeping a custom that has become less common. There is no single correct format. The family and its elders decide who comes and how the evening runs.

For how the berinai fits the rest of the wedding, see our guide to the full Malay wedding journey, step by step.

What food do families serve at a malam berinai?

There is no official berinai menu. The heritage records we read describe the henna, the blessing and the rose water. They do not list dishes for the henna night. Menus vary by family.

The records do show food at the heart of the older wedding preparations. BiblioAsia quotes Abu Talib Bin Ally, who lived in Kampong Glam in the 1920s, on the days before a wedding: three or four days ahead, friends and relatives gathered at both families' homes. "To cook, to eat," as he put it. In the kampongs, families cooked for each other in the spirit of gotong royong (communal help).

One food item does belong to the berinai in the record. At the berinai besar, the person leading the blessing was handed a flower taken from the pulut pahar, as thanks. The pulut pahar is an arrangement built on yellow glutinous rice and decorated with flowers and hard-boiled eggs (BiblioAsia, 2021).

For the walimah (wedding feast), BiblioAsia notes that the rice is nasi minyak (ghee rice) or nasi biryani.

Our view, for 50 close family at home: choose one rice, one or two mains, a gravy and something cool, and stop there. If the walimah will be nasi minyak, a briyani on the henna night keeps the two meals from repeating. Add one sweet for the elders and one cold drink. Pick food that holds well on one table for a couple of hours.

If your family wants a more traditional dish on the table, ask your elders first, then the caterer. For what Malay families commonly serve at gatherings, see what a kenduri is, and its five types.

Hosting 50 close family in an HDB flat: what changes

A malam berinai at home changes three things: the clock, the table and the corridor.

The clock. SFA, Singapore's food agency, has guidelines for ordering catered meals. They set a 4-hour limit for food kept at room temperature, counted from cooking in the caterer's kitchen to eating. SFA also asks you to have it delivered no earlier than 1 hour before meal time.

On a henna night, relatives tend to arrive across the evening. So set one meal time, plan the henna around it, and tell latecomers when the food comes off the table.

SFA adds that a time stamp on each packed meal or buffet table has been mandatory since 15 February 2012. Read it when the food arrives: it tells you when the food should be eaten by. SFA also says to engage only licensed food caterers.

The table. In a flat, one table along a wall usually works better than two. Trays and thermo jars sit on a table you already own. A skirted buffet set-up looks neater but needs floor space, so measure before you choose.

If the bride's hands are hennaed early in the evening, plan for her to eat first, or keep a plate aside for later.

The corridor. Fifty guests means a lot of shoes. SCDF, Singapore's civil defence force, publishes fire safety guidelines for residential estates, which cover HDB common corridors. They say an escape path at least 1.2 m wide must stay clear along the corridor, measured from the parapet wall. SCDF allows shoe racks there only for keeping shoes. Line shoes neatly against your own wall, or bring them inside, and let your neighbours know about the evening.

For the headcount maths at this size, see halal catering for 50 pax.

Where the henna night sits in the wedding week

In the older order, two henna nights came on the evenings before the nikah, and the berinai besar came after it (BiblioAsia, 2021). Roots places the berinai on the night before the bersanding.

Today the week is often shorter. BiblioAsia notes that for many couples, the nikah, walimah and bersanding now fall on one day. In that case, the evening before is a natural slot for a henna night, in the same week as everything else your family is catering.

Map the whole week before you order:

If one caterer is feeding several of these, say so in your first message.

Which Saffrons formats fit a henna night for 50?

Saffrons caters from 30 to 3,000 guests, according to its homepage, so 50 is well inside its range. Its catering packages page describes it as a 100% Muslim-owned caterer with an SFA-licensed central kitchen and MUIS halal certification. Saffrons publishes no per-person rate, so prices come by WhatsApp. Here is what each format includes, from the live package pages:

Format What the page lists How it fits a flat
Mini Buffet Package 1 Pick a rice (briyani or bee hoon briyani) and one main: mutton masala, chicken tandoori or fish, the last two fried or masala. Dalcha and acar timun come with it Packed in disposable trays or large thermo jars; delivery, or self-collection at no extra charge
Mini Buffet Package 2 Pick a rice, a mutton masala or fish main, and a chicken dish (masala, fried tandoori or masak merah). Acar timun comes with it; dalcha too, except with bee hoon briyani Disposable trays or thermo jars; delivery, or self-collection at no extra charge
Buffet Package 1 Pick a rice, a mutton masala or fish main, and a chicken dish (masala, tandoori or masak merah), served with dalcha, acar timun and drinks, hot and cold Delivered and set up, with buffet trays, tables and skirting, and disposable wares; needs floor space
Buffet Package 2 Everything in Package 1, with two kinds of Malay kueh, the day's hot dessert, and teh tarik, coffee and tea Delivered and set up; the sweets and teh tarik suit the elders
Vegetarian Bento Plain white rice with rasam or sambar, a vegetable dish, pappadum and two bagedil (potato cutlets) One box each, for any vegetarian relatives

For a henna night, the Mini Buffet is the lighter choice: it sits on your own table, and you can collect it yourself. If you do, drive straight home, because SFA's four hours start when the food is cooked. Buffet Package 2 suits families who want kueh and teh tarik on the table and can spare the floor space.

Fewer than 30 guests? Catering starts at 30. For a smaller henna night, ask on WhatsApp about briyani packets or bento sets. For more on sizing, see planning a mini buffet by guest count.

A checklist for the night

  1. Agree with your elders who the henna night is for: the bride and the women of the family, or both sides.
  2. Fix the headcount. Under 30, ask about packets or bento instead of a buffet.
  3. Set one meal time, and plan the henna before or after it.
  4. Ask for delivery no more than 1 hour before that meal time (SFA).
  5. Read the time stamp when the food arrives, and clear the table by the time it shows.
  6. Measure the wall where the buffet table will go.
  7. Keep the common corridor clear: shoes on racks or inside, at least 1.2 m of walkway (SCDF).
  8. Check the caterer's halal status yourself, against MUIS's list of certified establishments on its website or the MuslimSG app, as the ministry advises (MCCY, 2023).
  9. Tell the caterer about the rest of the week, if they are feeding it too.

Where Saffrons fits

Saffrons' founder, Mdm Beevi, started out catering weddings before she opened the first Saffrons restaurant in Tampines in the mid-1990s (Saffrons wedding packages). The kitchen is known for its Gold Class Briyani, and the Mini Buffet and Buffet Package dishes above are what it cooks for family gatherings like this one. For malam berinai food in Singapore at 50 guests, both fit.

FAQ

What is malam berinai in English?

Malam berinai means "henna night"; inai is Malay for henna. On the National Heritage Board's Roots site, the berinai is the evening the bride's fingers are hennaed, on the eve of the bersanding (sitting-in-state). BiblioAsia (2021) records three henna ceremonies in the past: berinai curi, berinai kechil and berinai besar.

Is malam berinai a Malay custom?

Yes. It is part of the traditional Malay wedding, and Roots notes that henna is used mainly by the Malay and Indian communities in Singapore, especially at weddings. BiblioAsia records that the berinai is rarely observed in Singapore today, so families who hold one set its form themselves. Customs vary by family and region.

Which caterer suits a henna night for 50 relatives at home?

Any SFA-licensed caterer with MUIS halal certification whose format fits a flat. Saffrons caters from 30 guests: its Mini Buffet Packages come in disposable trays or thermo jars, with delivery or free self-collection, and its Buffet Packages are delivered and set up.
