Your Pax Count Is Not Your Order Size

Here is the arithmetic almost nobody runs.

At a single-cuisine event where everyone eats everything, sixty guests and six dishes means every dish is a candidate for all sixty people. Simple.

Now add reality. Some guests avoid beef. Some are vegetarian. Some won't touch seafood. If a third of your room won't eat the beef dish, that dish feeds two-thirds of the pax it appears to feed — while costing you the full amount. Multiply that across two or three dishes and you have simultaneously over-ordered and under-fed.

So count your dishes by who can eat them, not by how many there are:

  • Two dishes the whole room eats beat four where two are ruled out for a large group.

Why You Cannot Simply Over-Order
